The arbi curry tastes delicious with rotis and puris. Arbi fry/roast makes a very good appetizer or starter, or can even be served as side dish for rajma chawal, dal-chawal or rasam rice. Instructions to make Arbi Stir Fry:
  1. Wash the arbi properly.
  2. Take a pan add water bring it to boil..add salt and arbi..and let it boil for around 5 to 8 minutes.
  3. Drain the water..let the arbi cool down.Once cooled peel it and slice it.
  4. Take a pan..add oil..once hot add hing..curry leaves,green chilli..add the arbi and salt, saute it for around 5 minutes.
  5. Add the dry spices give it a nice mix..let it cook for some time..add tamarind pulp..stir it well.Let it cook for 10 minutes.
  6. Garnish it with coriander…

It can be served as a side dish along with rice. Arbi masala is just a simply mixture of flavorful Indian herbs and few spices. Today I'm boiling my arbi, but sometimes I warm it in microwave just to make it tender. Taste and adjust the salt and chili accordingly. Once done, remove from the pan, transfer to a serving bowl, stir the coriander leaves and serve.
