These Crispy Taro Fritters are actually inspired by the dish I like to get at Chinese restaurants: soft taro coated with crispy breadcrumbs before being deep-fried. My healthified version here is pan-fried rather than deep-fried, and uses cornflour instead of breadcrumbs, which keeps them much lighter. Before we can make some taro fritters, we will need some taro root, some dried shrimps (Indonesian: ebi), and salted soy beans (Indonesian: tauco). We will also need tapioca starch, all purpose flour, rice flour, garlic, salt, and sugar.

  1. Wash taro leaves / arbi patta and remove outer part of the spine
  2. Soak rice and bengal gram for 4 - 6 hours.
  3. Then drain rice and bengal gram completely and grind coarsely.
  4. Take a large bowl add rice and bengal gram paste,ginger garlic paste,red chilli powder,turmeric powder,salt and tamarind water / imli ka pani and mix well.
  5. Spread the mixture over the taro leaves / arbi patta and cover with other leaf.
  6. And fold it to make a bundle.
  7. Steamed for 10 mins.
  8. Cut into pieces.
  9. Heat oil in a pan.
  10. Deep fry the taro leaves fritters golden and crispy.
  11. Drain in paper napkins.
  12. Serve hot with tea.
