Use a greased silicone spatula to loosen the sides of the Kueh Lapis from the square tin tray, then invert the tray over a piece of baking paper. Flip the kueh over so the red colour is on top. Pour in the boiling water and stir until sugar dissolves. Add both flours and a pinch of salt, stir until you get the smooth batter.

Instructions to make Layer Cake (Kue Lapis):
  1. Heat up coconut milk with pandan leaf and salt. Wait until bubbles appears. Set aside.
  2. In a bowl, mix coconut milk, sugar, and flour. Wisk throughly until incorporated and there is no lump.
  3. Divedid mixture into two parts. Add cocoa powder in one of mixture.
  4. Grease mold with oil. Prepare the steamer. Pour about 50 ml chocolate mixture, and steam for 5 minutes. Open the lid, and add white mixture on chocolate mixture. Steam for 5 minutes. Repeat until finish.
  5. Transfer the cake from steamer. Let it cool and slice it. Serve and enjoy !
