Mapo Tofu is a popular Chinese dish from Sichuan Province, where spicy food is king and the signature spice of the region–the Sichuan Peppercorn–gives dishes a unique "numbing" effect. It's almost like the Sichuan peppercorns are there to not only add their fragrance and flavor, but also to numb your tongue so it can take more heat! JOC's all-time favorite dish, and it frequently makes it into my dinner menu rotation.

Instructions to make Mapo Tofu:
  1. In a frying pan - Put the olive oil, the chopped ginger and the garlic with low heat until it smells good.
  2. Add the minced pork and the chopped leek in the frying pan and heat until the pork becomes brown.
  3. Add a pinch of salt and pepper until taste is good.
  4. Cut the Tofu into 1.5cm cube.
  5. Add the Tofu, water, soy sauce and miso in the frying pan and boil for a while.
  6. In a cup - Mix the corn starch and water together.
  7. Turn off the heat of frying pan. Add the corn starch and water in the frying pan little by little and mix.
  8. Taste and adjust with salt. You can add chili flakes.
  9. Add sesame oil and the slice of leek and Enjoy!
