Place the tilapia, lemon juice, coriander, and parsley in a bowl; toss until fillets are evenly coated. Forget about gluten free and sugar free, let's talk about the tender, flaky fish, the salty capers, and the sweet tomatoes.

The ingredients needed to make Poached Tilapia:
- Take for the fish
- Get 4 tilapia filets
- Take 1 salt & black pepper (to taste/ as needed)
- Prepare 2 tbsp butter
- Prepare 1/2 shallot (minced)
- Get 1 large sautee pan that has a tight fitting lid ( i made a greased parchment paper lid as well)
- Get for the sauce
- Prepare 1 1/2 cup dry or crisp white wine

- Take 2 tbsp butter (whole/cold)
- Prepare 1 salt & white pepper ( to taste/ as needed)
- Make ready 1 tomato ( peeled, seeded, diced)
- Take 2 tbsp parsley (finely chopped)
Poaching seafood in olive oil makes it virtually impossible to end up with anything other than impossibly tender fish. This formula is also incredibly versatile, since you can infuse the oil (and by association the fish) with any flavors you like. Place the sliced onions in the bottom of an oven proof dish. Add the fish on top of the onions, and then the Dill, Pepper, and Salt.
Steps to make Poached Tilapia:
- season the tilapia
- heat the first 2 tbsp's of butter over medium high heat. ( you can use a little more butter if youd like)
- add the minced shallots- saute until translucent.
- add the tilapia to the pan with shallots
- pour in the wine
- cover the pan and reduce the heat to low.
- cook until the tilapia is completely cooked and the wine is almost reduced all the way ( about 10 minutes)
- when cooked, remove the tilapia and set aside (covered to keep warm.)
- add the cream to the reduced wine and swirl it into a sauce over medium low heat, scraping the pan to release cooked particles stuck to the pan .
- mix in the remaining butter to thicken the sauce.
- As it thickens, you will need to add salt and white pepper to give your sauce flavor. taste and adjust seasoning.
- strain the sauce if desired. mix in the tomatoes and pour the sauce over the cooked tilapia. garnish with chopped parsley and enjoy!
