  1. Get 220 g luxury dried mixed fruit
  2. Make ready 40 g butter
  3. Take 145 ml water
  4. Make ready 175 g self raising flour
  5. Make ready 1/4 tsp Bicarbonate of Soda
  6. Take 5 cardamom pods, de-seeded and crushed
  7. Get 1 tsp Mixed Spice
  8. Get 1 pinch salt
  9. Prepare 1 egg
  10. Make ready 110 g dark muscavado sugar
  11. Prepare Half a cooking apple, cored and sliced

Steps to make Fragrant Spiced Tea Loaf:
  1. Preheat the oven to 160C fan. Grease and line with parchment paper a 1lb loaf tin.
  2. Put the mixed dried fruit, butter and water into a pan. Bring to a boil and simmer for 5-10 minutes.Remove from the heat and set aside to cool a little.
  3. Cream together the egg and sugar for 10 minutes until paler in colour using a beater. Add the cardamom and mixed spice
  4. Sift the flour, bicarb of soda and salt into a separate bowl.
  5. Add half of the flour mixture into the egg/sugar mixture and mix gently, followed by half of the warm fruit mixture. Add the remaining half of the flour mixture followed by the remaining half of the fruit mixture until all incorporated. Mix gently as you go.
  6. Pour the batter into the prepared loaf tin. Pop the apple slices on top and push down into the batter slightly so they are nestled nicely. Bake for 35-45 minutes or until a skewer inserted comes out clean. Leave in the tin for 20 minutes, then turn out not a wire rack to cool.

My Grandma was what might be termed 'a plain cook'. As cakes go, this tea loaf is pretty healthy. It's filled with nutrient-rich dried fruits, whole grain flour, and it's fat free! It's incredibly easy to make too. You simply soak the dried fruit in a cup of tea for a few hours, then mix all the ingredients together and bake.
