A hint for keeping the pesto mix creamy~ save some of the cooking water from the pasta. Add it slowly to the drained pasta & pesto paste. It will make a creamy, hot sauce that will coat the pasta smoothly. Transfer the pesto to a large serving bowl and mix in the cheese. If freezing, transfer to an air-tight container and drizzle remaining oil over the top.
