Cut into thin strips with a sharp knife. Grab both ends of each strip, press down firmly to seal the edges and twist. Brush one edge of the pastry with egg wash & carefully fold over pressing the edges down with a fork. Repeat with the rest & place on a baking tray lined with baking paper.

Steps to make Cheesy pesto puffs:
  1. Preheat the oven to 220C. Unroll the puff pastry sheet and spread the pesto evenly. Scatter over the cheddar and Parmesan.
  2. Start rolling the puff pastry from the long edge until the middle. Do that with both sides.
  3. Cut it into 2 cm pieces and spread them on a baking sheet lined with parchment paper.
  4. Bake it for 10-15 minutes until they look nice and golden. Scatter over some sesame seeds (optional). Enjoy!
