  2. Get Flour (dusting)
  3. Make ready 1 kg spinach
  4. Make ready 1 onion
  5. Take 1 tsp garlic paste
  6. Take 1 tsp whole grain mustard
  7. Take 1 stalk celery
  8. Make ready 1 ball mozarella
  9. Get 250 g grated mature cheddar
  10. Make ready 3 eggs

Use a large bowl and add the cream cheese, cooked spinach, onion, and mozzarella. For Ham & Broccoli Swirls, omit the spinach, cheeses, onion and garlic powder. Unfold the pastry sheet and brush with the egg mixture as directed above. Beat the egg and water in a small bowl with a fork.

Steps to make Spinach swirl:
  1. Preheat oven to 180’C.
  2. Fry onion and celery till soft. Mix spinach but take off the heat. Add garlic, mustard, seasoning (salt, pepper, thyme, origanum) and pull mozzarella apart and mix into spinach. Let mixture cool down. Beat two eggs and mix into spinach.
  3. Roll pastry into a rectangular shape 2mm thick. Spread spinach evenly over pastry. And then roll pastry into a sausage. Cut into 8 even pieces and place onto a tray with parchment paper.
  4. Beat an egg and egg brush the pastries. Carefully top the pastries with grated cheese.
  5. Bake for 40 minutes and the let cool on a drying rack.
  6. Serve hot/cold with salad and tzatziki.

Unfold the pastry sheet and brush with the egg mixture as directed above. Beat the egg and water in a small bowl with a fork.
