Bolognese sauce is a classic family favorite dish. Today I'm sharing a delicious alternative to the traditional bolognese sauce - vegetarian bolognese sauce! As a vegetarian (and just a carb lover in general), pasta is one of my favorite meals. It's a great way to get lots of veggies, pasta, and protein for a well rounded meal.

Steps to make Vegetarian bolognese:
  1. Grate the carrots
  2. Finely chop onion and celery and mix with carrots and level teaspoon of garlic powder
  3. Fry mix in a little olive oil untill 70% cooked
  4. Fry mushrooms in a little olive oil (vegetable oil will do)
  5. Mix chopped tomatoes, puree, and level teaspoon garlic powder with a little hot water
  6. Add mix to mushrooms
  7. Add mixed herbs and mix together
  8. Add veg mix
  9. Add passata and mix and simmer for 2 hours minimum, add water as needed
  10. After 2 hours add choped basil leaves simmer for 1 hour
  11. Add salt and pepper to taste
  12. Boil pasta and when 75% cooked add to mix
  13. Mix and simmer for 5 mins stirring regularly
  14. Serve with grated cheese of choice and garlic bread, or in this case cheese and pear soda bread.
