Brinjal strips are stir fried in onion, garlic, powdered spices masala mix and a tempering made of mustard seeds, cumin seeds and curry leaves. Once the tomatoes turn soft, add all the spice powders, and brinjal. Cover and simmer till the brinjal is cooked soft. Finally add the tamarind extract, add a cup of water and bring to boil.

- Heat up kadai Add oil and fry sliced onions
- Take out onion now add brinjal pieces and saute on high flame till soft but firm
- Take out brinjal and add asafoetida and cumin in the oil left in kadai
- Add chopped tomato and salt and cook till it is cooked
- Add coriander powder, red chilli powder and mix
- Now add imli pulp and a little water and cook for 30 sec
- Now add onion, brinjal and mix and cook covered on low flame for 3-4 mins
- Garnish with coriander leaves and serve khatte baigan
Cover and simmer till the brinjal is cooked soft. Finally add the tamarind extract, add a cup of water and bring to boil.
