  1. Heat an earthen pot with oil.Add and fry ginger and chilli until ginger changes it's colour to little brown(do not burn them).
  2. Add tamarind extract, turmeric powder,red chilli powder, asafoetida and salt to taste. Let it boil for few minutes.
  3. Now add jaggery and allow it to boil until oil starts floating on top and the consistency becomes thick and saucy.
  4. Remove from heat and add tadka of mustard,fenugreek, chana dal,dry red chillies and curry leaves(you can even add tadka at the start).
