How to Make Green Tomato Chutney - the Recipe Method First, heat a pot to medium heat and add all of the ingredients. In a pestle and mortar, bash the garlic, ginger and chilli together to form a paste. However the chutney can be made with all red or all green tomatoes. The ingredients are variable - so long as you include vinegar - malt or cider vinegar - and some sugar, you are well on the way to making your chutney.

- Wash & Cut the green tomatoes into medium size pieces. - 2. Heat some oil in a pan,add sliced tomatoes,green chillies,peanuts,sesame seeds,jaggery & salt. - 3. Cover the pan with a plate.Add some water on the plate. - 4. Let it simmer on a low flame for 10 - 12 minutes. - 5. Check if the tomatoes are properly cooked.Once done turn the gas off.

- Let it cool down & then grind into a coarse paste. - 7. Transfer it to the bowl & add tempering.
However the chutney can be made with all red or all green tomatoes. The ingredients are variable - so long as you include vinegar - malt or cider vinegar - and some sugar, you are well on the way to making your chutney. You can add spices to pep things up a bit - may be some chilli powder for example. I had a mix of green and semi ripe tomatoes left on my plants. Add the rest of the vinegar, then the sugar, dried fruit and salt, and cook gently until the sugar dissolves.
