- Cook pasta according to packet instructions in a pot of salted water. Reserve cup of the pasta water and drain the rest when cooked through.
- In the meantime, heat olive oil over a medium-low heat and fry the prawns on each side, (I used large prawns which took less than 2 minutes to fully cook). Set aside once done.
- Add the garlic and chilli into the same pan used to cook the prawns and fry for about a minute or so until fragrant.
- Next add the tin tomatoes, parsley, sugar, vinegar and a 2-3 tablespoons of pasta water and simmer down for about 10 minutes until the sauce has thickened slightly. Season with salt and black pepper.
- Add the drained pasta, spinach and 2-3 more tablespoons of pasta water and cook for another 5 minutes or so until the spinach has fully wilted.
- Lastly add the cooked prawns and toss all together until the pasta is fully coated in the sauce and spinach.
- Serve sprinkled with cheese of choice (I used grated Cheddar cheese)
Make the sauce by heating the olive oil and frying the garlic and chilli. Add the tomatoes, red wine vinegar and sugar and bring to a simmer. Add the pasta, prawns and spinach to the sauce along with a couple of tablespoons of pasta water and toss everything together. Heat a frying pan, add a little olive oil and fry the langoustine and prawn meat for a few minutes. For the pasta, in a large pan of salted boiling water cook the spaghetti.
