- Prepare 1 clove garlic, minced,
- Get Fresh red chillies or red chilli flakes,
- Make ready Drizzle of chilli oil or rapeseed oil
Heat a large frying pan or wok with a glug of olive oil. Pour in the eggs and leave to set, then very softly scramble. Immediately scrape eggs into a bowl. Add the chili pepper flakes or chili sauce to the wok and stir-fry for a few seconds until the oil smells fragrant.
Instructions to make Stir Fried Eggs & Tomatoes:
- Heat up a wok and add a little oil in. Once hot add in the eggs. Stir them together so the whites and yolks are blended then leave them to set a little before pushing them around the wok. Once set into large chunks push over to one side of the wok and on the other add the spring onions.
- Next add in the tomatoes and drizzle over the crunchy garlic and chilli oil. Toss the spring onion and tomatoes together to coat them in the oil.
- Next gently fold everything together in the wok so it's all combined them toss a couple of times so everything is evenly distributed.
- Serve up immediately and enjoy! :)
