Tip the tender squash into a large bowl and mash, using a potato masher - keep it quite rough and textured, rather than completely smooth. Tip the drained chickpeas into a bowl and use a fork to mash them roughly - again, keep them quite coarse and chunky. Add to the squash with the sliced spring onions. Peel and very finely slice the onion and garlic, deseed and finely slice the chillies, finely chop the coriander stalks, reserving the leaves, then place in a bowl.

- Sand serve them on toasted burger buns with cheese and sweet chilli sauce.
Add to the squash with the sliced spring onions. Peel and very finely slice the onion and garlic, deseed and finely slice the chillies, finely chop the coriander stalks, reserving the leaves, then place in a bowl. Coarsely grate in the paneer and squash (deseed if needed), then peel and finely grate in the ginger. Sprinkle in the flour and a pinch. Add the vegetables and canned tomatoes and bring to a simmer.
