Anko paste is sweet like jam - here it is on toast, a speciality of Nagoya called "ogura toast". Sweet red beans are dipped in chocolate and Japanese matcha. Amanatto is traditionally made by dipping an azuki bean into refined sugar and drying it. Rinse the red azuki beans and put them into a pot.
Steps to make Sweet Azuki & Sesame Seeds Spring Rolls:
- Cut each large square sheet into 4 pieces. If you use smaller sheets, alter the amount of filling accordingly.
- Place 1 piece of Spring Roll Wrapper on a flat surface with a corner facing you. Cover remaining wrappers with a dump tea towel to prevent them from drying out.
- Place 1 tablespoon Sweet Azuki Paste, fold the front corner over and roll up slightly, fold in side corners, then roll up firmly to enclose. Wet the last corner with water to seal. Repeat with the remaining ingredients.
- Mix Plain Flour and Water in a bowl. Wet the rolls with it, and coat them with Sesame Seeds.
- Heat Oil about depth of 2cm in a saucepan over medium low heat. Carefully place the rolls into the Oil. Cook, turning occasionally, for 2 to 3 minutes or until crunchy. Transfer onto a plate lined with paper towel.
- Enjoy while the rolls are still hot and crunchy.
Amanatto is traditionally made by dipping an azuki bean into refined sugar and drying it. Rinse the red azuki beans and put them into a pot. It is a paste made with Azuki (red beans) and sugar. I said Anko is simple, but that doesn't mean it easy to make. A lot of Japanese sweet confectionery artisans have devoted their lives to Anko making.
