- Make ready 2 cup vegetable stock

- Take 1 tbsp chipotle paste
- Make ready 2 cm ginger
- Take 4 cloves garlic
- Take 200 g okra
- Take 300 g firm tofu
- Take 1 tbsp curry powder
- Prepare 1 tsp nutmeg
- Get 2 tsp smoked paprika
- Get 5 sprigs thyme
- Get 1 tbsp cumin
- Prepare 1 tbsp cornstarch
- Prepare to taste Salt

Instructions to make Jollof Rice, Fried Okra & Spiced Tofu:
- Chop the onion, pepper, tomatoes, chilli, ginger & garlic
- Slice okra lengthwise, coat in oil, cornstarch, cumin & paprika
- Coat the tofu in oil and cumin
- Blend ingredients, and add the chipotle paste
- Heat some oil in a pot, and gently fry the paste.
- Add curry powder, nutmeg, and tomato puree. Cook for a couple more minutes
- Add the rice and cook for a couple of minutes
- Add the stock, thyme and bring to a boil, then reduce heat to a simmer. Cook for about 15/20 minutes
- While the rice is cooking, heat some oil in a skillet and fry the okra
- Do the same for the tofu
- Once it's all nicely cooked, serve!
