Cut the vegetables and press excess moisture from the tofu. Whisk egg and mix in dashi, sugar and soy sauce. Add onion and garlic and cook till softened. Cover with a lid and cook until the egg has set.

  1. Add Dashi, sugar, Sake, soy sauce and Mirin in a pan. Heat until boiling. Add onion and cook for a minute at medium heat.
  2. Cut the tofu into 1 cm cubes. Add the tofu pieces to the pan and cook until the meat is cooked through.
  3. Beat egg in a small bowl and pour over the tofu and onion. Cover and cook for 30 seconds to 1 minute.
  4. Slide egg and tofu with sauce over rice in a bowl. Sprinkle with green onion.
