I really like the flavor combinations of the pork, soy, oyster and chili sauce. The dish also has a nice complement of textures from the ground pork, pan-fried tofu and shiitake mushrooms. I've modified this dish to make a MaPau Pork/Tofu dish which I loved from restaurants in Singapore. Doubled quantity of black bean sauce used beer instead of sherry added an equal amount of Japanese Rice Wine used one regular minced onion some mushrooms and voila!

Steps to make Pork, Chinese Mushroom and Chili Tofu:
  1. Prepare some tofu, chili, spring onion, coriander, mushroom, pork belly and garlic.
  2. Cut the tofu into pieces then put into boiling water to boil until you can see some little holes on them. (very important step which can make tofu absorb more flavor later)
  3. Finely slice the pork belly and put into the pan (pan on low heat setting and with no oil), let the pork fat cook until the pork belly is crispy. Add the star anise, garlic and also the sliced mushroom. Once the mushrooms are cooked add some soy sauce and the boiled tofu, and water to cover the tofu. Leave to cook until broth has reduced. Don’t rush the cooking, give it time to reduce.
  4. When the broth has reduced add some chili, oyster sauce and some sugar to your taste. Mix through and then to finish add some chopped coriander.
  5. Here we go! Time to serve the dish!

I've modified this dish to make a MaPau Pork/Tofu dish which I loved from restaurants in Singapore. Absorb the excess water from the tofu with kitchen towels. Season with a little of salt. Pan fry tofu over medium heat until both sides are lightly brown.
