Make the marinade: In a medium bowl, whisk together soy sauce, sesame oil, vinegar, sake, brown sugar, ginger and cayenne. The tofu is cubed, marinated and baked. Make the marinated tofu ahead and keep in the refrigerator. Substitute the tofu for your favorite vegan protein.

Instructions to make Tofu, Spinach & Carrot ‘Goma-ae’:
  1. Grind Toasted Sesame Seeds, add other sauce ingredients and mix well. *Find ‘How To Grind Sesame Seeds Using A Plastic Bag’
  2. Wash Spinach well and blanch in boiling water. Dip in cold water to stop cooking further, drain well and squeeze to remove excess water. Cut into 5cm in length. Blanch Carrot strips in boiling water as well.
  3. Slice Firm Tofu. Heat Oil in a frying pan over medium high heat, cook Tofu slices until golden and crispy. Cut into thin strips.
  4. In a bowl, combine Tofu strips and a half of the sauce, then add vegetables and the remaining sauce, and mix well.

Make the marinated tofu ahead and keep in the refrigerator. Substitute the tofu for your favorite vegan protein. Coconut Bacon is added for flavor and crunch. Romaine lettuce or kale can be substituted for spinach. Over medium-high heat, heat olive oil in a deep pan then add tofu in one single layer.
