The ingredients needed to make Mapo tofu:
- Get 1 block soft or medium soft tofu (cut up into cubes)
- Take 2 tbsp corn flour (optional)
- Prepare 200 g mince beef or pork or chicken
- Make ready 2 tsp soysauce
- Get 2 tsp grated ginger (or ginger powder)
- Make ready 1 tsp sugar
- Make ready 1 tsp sesame oil
- Take 1 spring onions (finely chopped)
- Prepare 1 clove garlic (finely chopped)
- Make ready 2 tbsp vegetable cooking oil
- Make ready Ground black pepper
- Take 1 tsp spicy Bean paste (optional)
- Prepare 2 tsp chilli oil (can check my recipe)
It consists of tofu set in a spicy sauce, typically a thin, oily, and bright red suspension, based on douban (fermented broad bean and chili paste) and douchi (fermented black beans), along with minced meat, traditionally beef. Variations exist with other ingredients such as water. Mapo Tofu is a popular Chinese dish from Sichuan Province, where spicy food is king and the signature spice of the region–the Sichuan Peppercorn–gives dishes a unique "numbing" effect. It's almost like the Sichuan peppercorns are there to not only add their fragrance and flavor, but also to numb your tongue so it can take more heat!
Instructions to make Mapo tofu:
- Coated your tofu lightly with corn flour then leave them aside. On medium heat non stick pan, add vegetable cooking oil in. Once your oil hot add tofu in and leave them cook for 5 min (don’t try to turn at this point) once you see tofu crisp up at the bottom you can start to turn them over and this is help tofu not get stuck on the pan and come off easily.
- Cook for another 5-8 min on the other side and remove you tofu on a plate lay with kitchen towel.
- Same pan, add garlic, stir well then add mince beef, soysauce, grated ginger, spicy bean paste, sugar and chilli oil.
- Add tofu back in and add some sesame seeds, sprinkle on top with spring onions and stir well. Ps.this is chilli bean paste I use (photo attached)
- Serve with some cooked jasmine rice. It’s so delicious and comforting.
