- Make ready 600 g firm tofu - cubed
- Prepare 200 g minced meat

- Get 1-2 tsp corn starch + 2 tbsp water

Add tofu, cover pot, and let simmer gently until tofu is heated through (do not stir or tofu will break apart). Use tofu labeled "silken" in a hardness range of medium to firm. Don't try this with the super-soft stuff or it'll fall apart!
Steps to make Mopu Tofu:

Stir until the sauce thickened. Start with only 1/2 C of water. Add cornstarch mixture. As for cornstarch, start with a teaspoon + 2 tbsp of water. Stir well. Check consistency. Add another half of water and another tsp of cornstarch for preferred consistency.
- Carefully slide tofu in and gently coat the tofu with meat sauce. Simmer over medium low heat for a minute. Drizzle some sesame oil on the dish and add finely chopped chili and sliced scallion/spring onion. Dish up.
Use tofu labeled "silken" in a hardness range of medium to firm. Don't try this with the super-soft stuff or it'll fall apart! I'd never sliced soft tofu before - it's so easy! two cuts horizontally then slice as on a grid. Very nice texture - creamy and soft. I tried not to stir the mixture too much as it heated so some of the tofu would retain its shape.
