- Prepare 300 ml strong hot black tea (made using 3 tea bags)
- Take 250 g mixed fruit
- Make ready 170 g brown sugar
- Make ready 225 g self-raising flour

How To Make Bara Brith Bara Brith originates like myself from Wales. Traditionally eaten as a snack with tea/coffee. I prefer it to normal fruit cakes. Bara Brith is a Welsh fruit loaf which is traditionally flavoured by adding tea, dried fruits and mixed spices.

- The night before baking mix the sugar and fruit in a bowl, pour over the tea and stir to dissolve the sugar. Leave the fruit to soak overnight.

- Add the flour to a large bowl with a pinch of salt, add the egg and mix, then slowly add the soaked fruit and tea a little at a time, until a thick batter is formed. Pour the mixture into the prepared tin.
- Place into the preheated oven and cook for 40-50 minutes. A knife inserted should come out clean. Leave to cool slightly in the tin, then turn out and allow to cool completely on a cooling rack.
