The ingredients needed to make Seafood Supper:
  1. Prepare 1 bag mixed frozen seafood, defrosted
  2. Get 1 onion, diced
  3. Get 1 clove garlic, crushed
  4. Take 1 tin plum tomatoes
  5. Make ready Splash Fish sauce
  6. Take Pinch dried chilli
  7. Make ready 1 tbsp tomato paste
  8. Get Rapeseed oil for sautéing
  9. Get 1 lemon
Instructions to make Seafood Supper:
  1. Sauté diced onion until soft. Add crushed garlic and dried chilli and cook for a minute over a low heat.
  2. Tip in the tinned tomatoes and break up. Loosen with approx 50ml hot water.
  3. Add a splash of fish sauce to season.
  4. Cool, covered for 10 minutes.
  5. Check seasoning of the tomatoes. Add a grind of black pepper. Don’t add salt at this stage as the seafood is salty.
  6. Add seafood to the hot tomato mix, give a thorough stir and heat through for 5 minutes or until piping hot.
  7. Add a squeeze of lemon juice check seasoning and adjust if needed.
  8. Serve with your favourite vegetables and perhaps some rice or crusty bread if you’re especially hungry.
