- Soak the noodles in hot water for about 5mins. Drain and set aside.
- Heat the oil in a pan; Add the onions and saute till translucent.

- Add the noodles and stir everything together for about 1-2 minutes; turn off heat and serve.

I never tried making pan-fried rice noodles until I came across the recipe in Andrea Nguyen's The Pho Cookbook (she calls them "panfried pho noodles"). Stir-frying dried rice noodles is much the same as stir-frying rice, in terms of the amount of oil, the seasonings, and the ingredients you want to add.
