You can use any veggies you have in hand like onions or spring onions, carrots, peas or bell pepper. Though the chewy texture of Chinese egg noodles is fantastic, you can substitute rice sticks or linguine. Omit or decrease the amount of chile paste if serving to kids. These pan-fried rice noodles are wonderfully crispy on the outside.

Steps to make Noodles and fried egg:
  1. Soak the noodles in hot water for about 5mins. Drain and set aside.
  2. Heat the oil in a pan; Add the onions and saute till translucent.
  3. Add the tomato and chilli, then add the carrots, bell pepper and green beans; add half pack of the indomie seasoning and fry for 2-3 minutes.
  4. Add the noodles and stir everything together for about 1-2 minutes; turn off heat and serve.

Omit or decrease the amount of chile paste if serving to kids. These pan-fried rice noodles are wonderfully crispy on the outside. They taste fantastic with fried eggs and a bit of hot sauce. I never tried making pan-fried rice noodles until I came across the recipe in Andrea Nguyen's The Pho Cookbook (she calls them "panfried pho noodles"). Stir-frying dried rice noodles is much the same as stir-frying rice, in terms of the amount of oil, the seasonings, and the ingredients you want to add.
