Instructions to make White bean truffle dip:
- Preheat oven to 190C.
- Peel the papery bits off the garlic - but leave the cloves in their skins. Chop the tops off. Place in a piece of silver foil in an ovenproof dish. Drizzle with olive oil. Wrap the garlic in the foil. Cook for about 35 mins in the oven.
- When the garlic is ready, leave it to cool so you can handle it. When you squeeze the cloves, the flesh will ooze out of the skin.
- Put the beans in a bowl. Add the garlic and everything else. Mash together. Add up to a tablespoon of water if you want. You can do this in a blender as well but it’s not necessary. Season according to your taste.
- That’s it! Before serving, drizzle a teaspoon of truffle oil on top. Enjoy 😋
