  4. Prepare 500 mls Fish stock

Steps to make Langoustines. (aka Scampi):
  1. Wash the shellfish, to remove any seaweed etc, then add to a large saucepan.
  2. Roughly chop the peeled onion and add to the pot, along with the peeled and crushed Garlic.
  3. Add the stock and bring to the boil. Simmer for about 15-20 minutes gently to cook the fish.
  4. To serve, strain away the liquid, then remove the tails. Break open the shell and consume the very tasty fish inside, yummy!!
