First I either use a non-stick or cast iron pan, I don't overcrowd the surface, I drain my tofu REALLY well, use only extra firm Chinese style and MOST important of all, I leave it undisturbed while cooking and this allows the golden crust we all love on pan-fried tofu to develop! Firm or extra firm tofu: You cannot use soft or medium tofu as it will release more water and fall apart.

The ingredients needed to make Pan Fried Tofu & Mushroom Sauces:
- Get 500 g Fresh Momen Tofu *OR medium soft Tofu
- Prepare Salt & Pepper
- Get Plain Flour
- Prepare 2-4 tablespoons Oil
- Get <Garlic & Soy Mushroom Sauce>
- Take 100 g Shiitake, Shimeji or Enoki
- Take 1 clove Garlic *sliced
- Take 2 Butter
- Take 2 tablespoons Soy Sauce
- Make ready 2 tablespoons Mirin
- Prepare 2 tablespoons Sake or Water
- Get 2-3 Spring Onion
Add the olive oil to a non-stick pan and add the tofu cubes and a few pinches kosher salt.; Turn on the heat to medium-high. A simple recipe of pan fried tofu drizzled with a spicy-sweet sauce (made from garlic, soy sauce, sesame oil, honey, and chili flakes). Easy and made with local pantry staples. It's funny how tofu gets associated only with vegetarian/healthy foods on the mainland.
Steps to make Pan Fried Tofu & Mushroom Sauces:
- Place Tofu on slightly tilted cutting board or plate for a while to remove excess water. If thick, cut to 2 to 3cm thickness.
- Make the sauce. Prepare Mushrooms. Cut Shiitake, or tear Shimeji and Enoki into smaller pieces.
- Heat butter in a frypan and cook Garlic until aromatic. Add Mushrooms and cook until cooked though, add Soy Sauce, Mirin and Sake.
- Salt & Pepper Tofu and coat with Plain Flour.
- Heat oil in a frypan and cook Tofu all sides until golden and crispy.
- Place tofu on a plate and cover with the Mushroom Sauce. Sprinkle some chopped Spring Onion and serve.
Easy and made with local pantry staples. It's funny how tofu gets associated only with vegetarian/healthy foods on the mainland. Crispy Pan Fried Tofu is a fabulous vegetarian snack or appetizer. The crunchy golden exterior is the perfect complement to the soft texture of the tofu. Paired with a bold & spicy dipping sauce, you'll want to eat these straight out of the skillet!
