- Cook orzo pasta according to box directions.
- Meanwhile start cutting the bell peppers, onion, cilantro, sundried tomatoes and garlic.
- Put all the ingredients in a bowl plus the avocado oil and salt.
- Drain the orzo pasta. After draining pour the pasta with the rest of ingredients. Mix very well. Taste to see if it needs more or less salt.
- Let stand for about 20 minutes. Then stir again and put in the refrigerator to chill for at least 3 hours.
