I had bought some coconut milk for something.but couldn't remeber what for. So I came across this recipe and to my delight.this was.

Instructions to make Coconut Tapioca Delight:
  1. Soak tapioca (sagu Dana) in 1 cup water for two hours. Then boil the tapioca till transparent.
  2. Strain the excess water from boiled tapioca and mix with green colour. Set aside.
  3. Mix gelatin and coconut milk powder in cold milk, set aside for 20 minutes.
  4. Now simmer the milk on medium flame and stir continuesly.
  5. Let the milk mixture cool at room temperature. Then mix with coconut cream and condensed milk.
  6. Make hard green jelly (1 cup water + 1 pack banana jelly). Set the jelly in flat pan.
  7. Put 1 tbls of green tapioca in serving dessert Glass and pour milk mixture on tapioca.
  8. Cut round green jelly pieces and set in each glass. Make moon and star with whipped cream.

I had bought some coconut milk for something.but couldn't remeber what for. So I came across this recipe and to my delight.this was. I did replace the sugar with a sub and it still worked out well. Soft and chewy tapioca pearls are a delight to eat! My kids have fun with the texture of tapioca!
