Cauliflower curry recipe spiced with turmeric with Tofu. About once a week sometimes twice a week, depending on how the mood strikes, we eat vegan. We are confirmed omnivores and sometimes can even be classed as big carnivores. Tofu, Cauliflower, sweet potatoes, bell pepper, garlic, turmeric, ginger and simmer in this coconut curry dish made in partnership with Nasoya Tofu.

The ingredients needed to make Turmeric Tofu and Cauliflower curry (vegan):
- Get 1 large (or 2 small) Cauliflower(s)
- Get Fresh coriander - as garnishing at the end
- Take 1 coconut milk carton (200ml)
- Make ready 300-350 gram firm Tofu
- Get 1 white onion
- Get 2 garlic coves
- Get 1 package mange tout (100-150 gram)
- Take 1 red pepper
- Make ready Coconut oil (1.5 table spoon)
- Take Handful coriander seeds
- Prepare 1 table spoon cumin seeds
- Take 1 table spoon turmeric
- Make ready 1 table spoon curry powder
- Prepare Pinch salt & pepper
For the vegetables, in a pan over medium heat, warm oil. This curry is a marriage between a simple curry base and aloo gobi. Aloo gobi literally means "potato cauliflower". I love a nice rich gravy with the addition of vegetables and vegan proteins like tofu.
Instructions to make Turmeric Tofu and Cauliflower curry (vegan):
- Chop the cauliflower, pepper, tofu in big pieces, Clean the mange tout. Put the oven on 180degrees.
- Put up rice (brown rice is my favourite - takes 30-45 min to cook depending on the rice you use)
- Add everything in a baketray and add 1 table spoon of coconut oil and the curry powder + turmeric + salt & pepper. Hustle and put in the oven for 25 min
- Add 0.5 table spoon oil in a deep pan, and fry the coriander seed + cumin seeds.
- After 2 minutes (and the seeds begin to pop) add cut onion + garlic (in small pieces).
- After 5-10 minutes (when onion is soft) add the coconut milk and put on low heat. Wait 10-15 minutes, then check the oven, if the veggies + tofu are well baked (soft/crispy on the outside) add them in the pan and cook together for 5 more minutes
- Drain the rice and serve all together - bon appetite :)
- Add fresh cut coriander (as in the picture) as finishing touch !
Aloo gobi literally means "potato cauliflower". I love a nice rich gravy with the addition of vegetables and vegan proteins like tofu. My vegan matar paneer with tofu is the perfect example!
