- Make ready 1 cm galangel, bruised
- Prepare Salt and sugar
Opor ayam is an Indonesian dish from Central Java consisting of chicken cooked in coconut milk. The spice mixture (bumbu) includes galangal, lemongrass, cinnamon, tamarind juice, palm sugar. Opor ayam is one of the popular Javanese chicken dishes. Opor refers to the method of cooking/braising in coconut milk.

- Rub Chicken with 1 tablespoon tamarind juice and 1 teaspoon salt and let it stand for 25minutes. Rinse and drain.
- Ground spices, garlic, shallots, candlenuts, coriander, cumin, pepper, ginger

- Heat oil and gently fry ground spices, lemon grass, kaffir lime leaves and salam leaf until fragrant
- Add chicken, cook for a few minutes, than pour in thin coconut milk. Bring to the boil.
- After the chicken is half cooked, pour in thick coconut milk.
- Simmer over low heat until the ingredients are cooked. Season with salt and sugar to taste. Sprinkle with fried shallots and serve with rice. And I add some boiled eggs.
