Pour in the tomatoes, plus one extra can of water or enough to cover the chicken and vegetables. Transfer the chicken pieces to a casserole dish, sprinkle. Transfer to a plate, season with black pepper, cover and keep warm. Heat a large saucepan over a medium heat. Add the oil and, once hot, add the chicken thighs, skin side down.
