- Make ready 2 Chicken breasts Cut into 3 chunks
- Prepare 250 g Sweet potatoes Peeled and cut into chunks
- Make ready 1 Onion Cut into chunks
- Take 1/2 broccoli head Cut into florets
- Take 8 cherry tomatoes
- Prepare 2 Garlic cloves Minced
- Take 1 Tsp Rosemary
- Make ready 1 Tsp Thyme
- Take 1 Tbsp Olive oil
- Get 1 Tsp Smoked paprika
- Prepare 1 Tbsp Lemon juice
- Make ready 100 Ml Chicken stock
- Prepare salt and pepper for seasoning
Sprinkle the chicken with salt and pepper. Heat the oil and butter in a heavy-bottom skillet. Add the shallots and garlic around the chicken. Cook briefly; add the tarragon, tomatoes, vinegar, capers, wine and tomato paste.
Steps to make Chicken, Tomato & Sweet Potato Bake:
- Preheat the oven to 180 oC - Place the sweet potatoes, onion, broccoli, cherry tomatoes, minced garlic, rosemary, thyme, olive oil, paprika, lemon juice and seasoning into a large bowl - Mix until well combined
- Pour into a casserole dish and roast in the oven for 25 minutes - Add in the chicken and chicken stock - Return to the oven for 25 minutes
Add the shallots and garlic around the chicken. Cook briefly; add the tarragon, tomatoes, vinegar, capers, wine and tomato paste. Pour in wine, scraping the bottom of the pan to loosen any bits. Pour in tomatoes with their juice and add tomato paste. Add salt and pepper to taste, stirring to combine.
