Instructions to make Vanilla Cake:
  1. Preheat oven to 175`C and spray cooking oil / butter in cake tin. I used 2 cake tins to equal out
  2. Melt the butter and mix with 1/2 cup oil. Add sugar and butter/oil mix in a mixing bowl and mix well.
  3. Once mixed well, add eggs in one at a time and mix. Will look a bit runny but still have a slight thick consistency. Add your 2 tsp vanilla essence and mix well.
  4. Get a sieve and add your flour and small amount of baking powder. Once sifted mix well to create a thick batter.
  5. Add in the milk and stir, but do not over mix. Once milk is nicely mixed in leave it.
  6. Get 2 cake tins and spread the batter equally in both trays and pop in the oven for around 25 mins on 175‘C. Check with a toothpick or skewer if batter has been cooked (if it hasn’t some mixture will go on the toothpick), and cook longer around 165’.
  7. Once done, get it out and allow to cool and make the icing (optional) i stopped here and just sifted a bit of icing sugar in my cake
  8. Enjoy with a lovely cuppa of tea or just enjoy plain! You can choose to top some strawberries if you have some (I ran out :(unfortunately)
