- Take 2 tbsp white caster sugar
- Take 1 can black cherries (425g can)
- Prepare Powdered jelly of any preferred flavour
Break the chocolate squares into smaller pieces and add them to saucepan. In a large bowl, mix the butter, sugar, eggs, flour, almonds, almond extract and a pinch of salt with an electric whisk until combined. Dollop the sponge mixture over the cherries and spread to a smooth layer, trying not to disturb the cherries underneath too much. I deliberately did not cook the "jelly" as long as was needed to reach the gel stage, which left the mixture somewhat runny, a topping.
Steps to make Chocolate Cherry Jelly Sponge-Pud:
- Make the jelly in advance before adding the rest of the ingredients.
- I only had gelatine sachets so I added 2 and 1/2 spoonfuls of 2 strawberry jam to give the gelatine flavour but you can just use a flavoured jelly mixture.
- Follow the pack instructions to make the jelly. When it's done, pour into the dish you'll be using, let it cool down and set before starting on the rest of the recipe.
- Make the coffee and let it cool down in a shallow bowl.
- Spoon the orange marmalade onto the jelly and spread evenly.
- Soak the sponge fingers in the coffee. No more than a few seconds otherwise they will go too soft.
- As you go along soaking the fingers, place them on top of the marmalade.
- Mix the brown sugar, cream cheese and butter together. Use a mixer if necessary to make it smooth.
- Spread the cream cheese over the sponge fingers evenly using a spatula.
- Drain the cherries. Then in a bowl mix 2 spoonful of white sugar, 2 spoonfuls of cherry syrup and 1 tablespoon of cherry jam with the cherries.
- Then spoon the black cherries over the cream cheese along with the syrup you just made.
- Melt the chocolate in a bowl over boiling water (Bain marie method)
- Once done drizzle over the cherries using a spoon.
- Let it set in the fridge for a minimum of 2 hours.
- Lastly, just before serving, shift the powdered sugar onto the dessert.
Dollop the sponge mixture over the cherries and spread to a smooth layer, trying not to disturb the cherries underneath too much. I deliberately did not cook the "jelly" as long as was needed to reach the gel stage, which left the mixture somewhat runny, a topping. When I used the Sweet Cherries we purchased just a little while ago, I made Chocolate Cherry Jam, and it has become my favourite way to eat chocolate. Place one piece of sponge onto the serving plate and spread over a third of the cherry jam, then a third of the kirsch cream. Repeat with the other sponges and remaining jam and cream until you.
