Instructions to make Cherry & Coconut Cake:
- Set oven to 150°C prepare ingredients and grease tin with butter
- Mix butter and caster sugar together in a bowl until the mixture is light and fluffy. Add the egg yolks slowly, mix between each addition
- Fold in coconut, flour and glacé cherries
- Whisk egg whites to a soft peak. Using a large metal spoon beat in one spoonful of egg white the slowly fold in the rest. Pour mixture into greased tin and cook for 45 min
- Leave to cool
- Top by spreading the strawberry jam, placing the glacé cherries and sprinkle coconut on top
